Roasted Broccoli with Orange Dressing

Have you tried your broccoli roasted? It is delicious.

The broccoli comes out with a milder taste than its raw or steamed counterparts. Add to that a sprinkling of a delicate orange dressing and you have got a nice, nutritious vegetable side dish. Plus, it’s really easy!

What you need:

2 heads of fresh broccoli
1 TB olive oil
½ tsp salt (or more if desired after cooking)
½ tsp black pepper
For the dressing
Juice from one orange
1/8 tsp ground ginger
1/8 tsp garlic paste
1/4 tsp low sodium soy sauce
1/4 tsp agave nectar
2 dashes hot sauce

What you do:

Preheat the oven to 400 degrees. Cut the broccoli into florets. In a large bowl, toss the broccoli with the oil, salt and pepper.

Place the broccoli in a single layer on a cookie sheet and put in the preheated oven for 20 minutes or until the ends of the broccoli are tender.

While the broccoli is cooking, whisk together the dressing ingredients. When the broccoli is done, lightly sprinkle the dressing on each serving and top with additional salt if needed.
