Gillie's Peanut Tofu Wrap

If you’ve not been to Gillie’s in Blacksburg, you must go.

This eatery has been in operation since 1974 and caters to vegetarians and vegans with loads of wonderful, tasty dishes.

I tried their Peanut Tofu Wrap, and Noah Gillie, kitchen manager and son of owner, Renae Gillie, was nice enough to share the recipe.

Actually, it is two recipes. He gives us the recipe for the flavorful peanut sauce and one for putting together the tofu wrap itself.

Gillie's Peanut Tofu Wrap (serves one)
What you  need:

1 flour tortilla
1 handful of mixed greens
1/2 cup cubed Twin Oaks extra firm tofu
Shredded carrots and sliced cucumber (in the ratio/amount you like)
2 tsp vegetable oil)

Sauté tofu in vegetable oil until crispy, tossing frequently (approximately 8-10 minutes). Once tofu is crispy, place the remaining ingredients into the tortilla with tofu, roll up the tortilla and enjoy.

Peanut sauce:  (A batch for several tofu wraps)

1 TB diced garlic
2 TB grated ginger
1/2 cup tamari
1 cup rice vinegar
2 TB Sriracha (hot chili sauce)
2 cups peanut butter
2 cups water

Place all ingredients into food processor and blend until smooth.
